Spicy Cauliflower Bites

These lil spicy bites are so awesome, they’ll make your taste buds tingle. Literally. Now we all see cauliflower here, but be courageous, it’ll be worth it. The new year is also coming up very soon, and this is the perfect dish to make or bring, to any new years bash! So, lets begin…

Ingredients

For Cauliflower Bites:

1 Cauliflower

For Batter:

1/2 cup All Purpose Flour

1/2 cup Water

1 tsp Onion Powder

1 tsp Garlic Powder

1 tsp Cumin

1/2 tsp salt

1/2 tsp Chipotle Power (optional)

1/2 Sweet Paprika

For Sauce:

1/2 Cup Desired Hot Sauce (I used The Wizards Organic Hot Stuff)

4 tbsp water

For Ranch Dressing: (OPTIONAL)

1 cup Cashews

1 tsp fresh dill (or powder if you do not have fresh)

1 tsp fresh parsley (or powder if you do not have fresh)

1 tbsp fresh chives (or powder if you do not have fresh)

1 tsp Onion Powder

1 tsp Garlic Powder

1/2 tsp Salt

Juice from 1 lemon

Directions

Step 1: Preheat oven to 450°F. Get a small bowl and whisk together all batter ingredients. Then cut your cauliflower into bite sized pieces. Once you have all your pieces, dip each one separately into your batter. IMG_3682.JPG

Step 2: Lay out your battered cauliflower bites on a sheet pan with parchment paper and bake for 20 minutes. IMG_3692.JPG

Step 3: While your cauliflower bites are baking, start preparing your sauce. Simply whisk together in a small bowl all sauce ingredients. Once your cauliflower bites are done baking, take them out of the oven. Using tongs to grab each cauliflower individually, dip in hot sauce, then place back on sheet pan. When all your cauliflower bites have been dipped in the sauce, put the sheet pan back in the oven to bake for 15 more minutes.

IMG_3699.JPGStep 4: While your cauliflower bites are finishing up baking for the last time, prepare your Ranch Dressing. Simply put all ranch dressing ingredients in a high speed processing blender. When your cauliflower bites are done, take them out of the oven and if desired, brush the tops with more hot sauce. You can serve these with nice fresh romaine lettuce leaves and guacamole. Of course this is optional. ENJOY!
