Peanut Butter Love Ice Cream Bars

These creamy rich bars are the perfect, almost whole food snack, for any peanut butter lover. This recipe is super simple, anyone can do it, whether you are vegan or not. It is also rich in all the omegas due to the delicious nuts and seeds which include walnuts, almonds, cashews, peanuts, and flax seeds. All of which are NOT cooked, baked, or roasted. Let’s get started!


Ingredients for CRUST:

1 ½ cups Dates (pitted)

3 tbsp Peanut Butter

2 cups Walnuts

1 flax egg (1 tsp milled flax seeds and 2 tsp water) If you have whole flax seeds, just use a blender.


Ingredients for FILLING:

2 cups Soaked Cashews

1 cup Coconut Milk

1 ½ tsp Cacao Powder

1 tbsp Vanilla Extract

1 or 2 tbsp Maple Syrup (you can also use agave, coconut nectar, etc.)

2 tbsp Peanut Butter


Ingredients for CHOCOLATE TOPPING:

5 Enjoy Life BoomCHOCOboom bars (you can use ANY vegan chocolate just make sure it melts)


Ingredients for TOPPING:

½ cup Crushed Almonds



Step 1: In a food processor put all crust ingredients in and blend. Use parchment paper to cover a glass bakeware, or it can be enamel, metal, etc. Make sure it’s around the size of 9 x 9. Once blended, take crust and place it in your glass bakeware. With your fingers press down on crust to mold and shape the crust to the bottom of the bakeware.


Step 2: Put all filling ingredients in a high-speed blender and blend until smooth. Once you have blended the filling, place it in your glass bakeware on top of your crust layer.


Step 3: Melt your chocolate bars on medium to low heat until completely melted. Once melted, let cool and then place the melted chocolate on top of your filling in your glass bakeware. Swirl it around with a spoon.


IMG_3548.JPGStep 4: Place your crushed almonds on top of your Peanut Butter Love Swirl Bars and let cool in the freezer for about 2 hours if you just can’t wait and want to eat them quickly. Or you can put it in your refrigerator overnight. Make sure everything is solidified or you will have a mess when you take them out and try to cut the bars. When ready to cut, remove using the parchment paper. It will pop right out. Enjoy!
